Almojábana is a Colombian cheese bread, fluffy and slightly salty, eaten with coffee or hot chocolate. At Tequendama, we turned it into a dessert: an almojábana cheesecake with guava paste, which you'll find at Las Rozas and Moments, subject to availability. At Tequendama Moments, there are also freshly baked almojábanas.

Almojábana, pandebono and buñuelo
- Almojábana: made with curd cheese and corn, fluffy, shaped like a ring or a bun.
- Pandebono: from Valle del Cauca, made with cassava starch and cheese; chewier.
- Buñuelo: a fried ball of cheese and starch, the sweet-and-savory treat of Colombian Christmas.
Our almojábana cheesecake
It combines the creamy texture of a cheesecake with the flavor of almojábana and the sweet counterpoint of guava. We brought it in individual portions to the Barranquilla Carnival 2027 launch at the Colombian Embassy.
