The oblea is a Colombian street sweet: two very thin, round wafers, the size of a dessert plate, spread with arequipe (dulce de leche) and topped with whatever each person asks for: blackberry jam, grated cheese, cream or coconut. It's very typical of Bogotá and of Floridablanca, in Santander. At Tequendama we make the Oblea Típica de Bogotá in Las Rozas and at Moments.

Sweet and cheese, together
What surprises people most outside Colombia is the grated cheese on the sweet. There it's a long-standing combination, like guava paste with cheese: the cheese softens the arequipe and adds a salty touch. The blackberry brings the tartness.
How it's eaten
With your hands, holding the two wafers like a sandwich. When you bite, they break and the filling spills out the sides, so have a napkin handy. Eat it right away, before the wafer softens.
