Today, Tuesday, October 6, Fruit Attraction 2026, the major international fruit and vegetable trade fair, opened at IFEMA Madrid, and we were there: at the stand of ProColombia, the agency that promotes Colombia's exports, tourism and investment abroad, with a menu that put Colombian fruit in the spotlight.
The idea: patacón baskets
For a fair devoted to fruit, we wanted Colombian fruit at the center of the plate. We made patacón baskets (crispy fried green plantain shaped into a cup) filled with guacamole with sweet mango and finished with a lulo reduction and fresh cilantro sprouts.
Lulo is one of those fruits any Colombian recognizes at the first sip and that many people in Europe are still discovering: tart, fresh and very aromatic. Together with the sweetness of the mango and the creaminess of the guacamole, the bite has that balance of crunchy, tart and sweet we look for in our cooking.

Colombian bites for events
Patacón baskets are a good example of what we do in catering: Colombian bites you eat standing up, in one or two mouthfuls, that work just as well at a trade fair as at a corporate event or a celebration. If you're planning something, tell us and we'll put together a tailored proposal.
It's been a busy week: the day before, we were at the Colombian Embassy serving our almojábana cheesecake at the launch of the Barranquilla Carnival 2027. It was a pleasure to be at the ProColombia stand. Fruit Attraction is open until Thursday, October 8, at IFEMA Madrid.
