From the Colombian grill to your table in Madrid
The Tequendama menu travels Colombia from end to end: the Caribbean in the chicharrón ceviche and the mojarra frita, the Andes in the ajiaco santafereño and the sobrebarriga in smoked Creole sauce, and the Valle in the chuleta valluna. Bandeja paisa is still the dish first-timers order most — and the one regulars come back for most.
To start, patacones, arepitas, tequeños and freshly fried empanadas open the meal. From the grill, flame-grilled cuts and BBQ ribs with just the right touch of smoke. And to finish, traditional desserts: oblea, almojábana cheesecake or classic guava paste. Everything made with fresh produce and no shortcuts, just as it's cooked in Colombia.
