On Monday, October 5, we had the honor of taking part in the Colombian Embassy in Spain's event presenting the Barranquilla Carnival 2027 in Madrid. An afternoon celebrating one of Colombia's biggest festivals (recognized by UNESCO as Intangible Cultural Heritage of Humanity) and, for us, a chance to bring a little piece of Tequendama to a very special occasion for the Colombian community in Spain.
The dessert we chose: almojábana cheesecake
The almojábana is one of Colombia's most beloved cheese breads, the kind you have with an afternoon coffee or hot chocolate. At Tequendama we turn it into a cheesecake: the creaminess of a cheesecake with all the flavor of almojábana. For the event we served it in individual portions on plantain leaves, easy to eat standing up without losing the essence of the dish.
Catering designed for events
Behind every tray there's work in the kitchen and on the floor: the cakes arrive whole, they're cut and plated on site, and our team looks after the table throughout the event.
